The flour is suitable only for heat treatment. It is very versatile: preparation of savory and sweet doughs - it gives gluten-free pastries elasticity for thickening, making sauces, béchamel and for making traditional Asian dishes. Stickiness is caused by the high starch content contained in the grains - therefore, white glutinous rice flour has excellent thickening and binding properties and is a good substitute for missing gluten in gluten-free pastries.
