Tapioca has a wide range of uses, it can be added to gluten-free flour and improve the consistency of ready-made meals. It is suitable for thickening soups and sauces, for sweet and savory baking. Tapioca pearls are used as a thickener for puddings, to soften gluten-free doughs, as a binder instead of eggs. You can prepare your favorite bubble tea from tapioca.
The balls, soaked for at least 10 minutes and blended, can be added to naturally gluten-free flour to soften the dough in an approximate ratio of 1:5 - for pancakes or other doughs. Ground or dry crushed balls can be used in sponge cake doughs instead of cereal flour, usually in combination with ground nuts or other naturally gluten-free flour, to give the dough elasticity. Soaked balls are also prepared as a dessert in the style of puddings.
